The inspiration behind this recipe are the sauces from the Canary Islands. Using an air fryer will finish this plant-based chicken skewer dish in minutes, leaving you to imagine you were sunning your feet on the promenade watching the Fred Olsen disembark for Fuerteventura. Dreamy.
Ingredients
- 1 pack Meatless Farm Plant-Based Chicken Breasts
- A pack of medium/small skewers, soaked in water for a few hours before cooking (to prevent burning)
- 2 peppers, chopped into 2-inch square pieces
- 2 red onions, peeled & cut each into 8 wedges
- 450g medium-sized potatoes
For the red mojo sauce:
- Olive oil
- ½ bulb garlic, peeled
- 2 red peppers, deseeded and chopped
- 1 tsp paprika
- ½ tsp cumin
- 1 red chilli, deseeded
- A stale slice of bread
- Splash of red wine vinegar
- Salt
For the green mojo sauce:
- Olive oil
- 1 bunch coriander
- ½ bulb garlic, peeled
- Juice of 1 lime
- ½ tsp cumin
- A stale slice of bread
- A splash of red or white wine vinegar
Method
- First off make your green and red mojo sauces by whizzing the ingredients up in a food processor or blender. Split both in half and pop one of each in the fridge for serving time, the other two we will use for marinating.
- Next grab a pan and fill with cold water then heavily salt it and place on the hob. In go your potatoes – skin on – and bring to the boil to simmer until cooked through.
- Grab your Meatless Farm Plant-Based Chicken Breasts from the fridge, slice both into half lengthways and then into half and half again. There should be 16 pieces. Place 8 in the red sauce and 8 in the green sauce you reserved for marinating. Now chop your veg – red onion and peppers – you could use any quick cooking veg – courgette works well, too.
- Time to build your skewers. Alternate MF Chicken and veg until the skewers are full. Also choose skewers that will fit in your air fryer, or if they don’t – snap them in half now.
- Drain your potatoes and allow to steam, then toss in olive oil and with the back of a flat spoon, slightly crush them.
- Throw the potatoes into the air fryer and layer the skewers on top. Air fry for 10 mins on 180C or until the potatoes have crisped up a bit!
- Serve alongside your dipping mojo sauces.
