Andrew Dargue’s Corn Bangers & Smokey Tomato Salad

Ingredients

  • 1 pack Meatless Farm Plant-Based Sausages
  • 90g cornmeal (polenta flour)
  • 90g self-raising flour
  • 5g baking powder
  • 1/4 teaspoon turmeric
  • Salt to season
  • 110g frozen sweetcorn, defrosted and well drained
  • 155g water
  • Sunflower or vegetable oil for deep frying
  • Flour for dredging
  • Juice of half a lemon
  • 25g sunflower oil
  • 5g sugar
  • ½ teaspoon (3g) smoked paprika
  • sprinkle salt
  • 1 tomato, sliced thinly
  • 6 cherry tomatoes, cut in half
  • 1small red onion, sliced into thin rings
  • 1teaspoon Maldon sea salt
  • 1teaspoon crushed black pepper
  • 1 potato cut for fries (alternatively, you can use frozen fries)

Preparation

    1. Mix the cornmeal, flour, baking powder, turmeric and salt in a bowl. Take 80g of the sweetcorn, place in a bowl and crush with the end of a rolling pin or large spoon. Keep 30g of sweetcorn whole.
    2. Whisk the water into the dry mix to make a batter. Carefully fold in all of the sweetcorn. Allow the batter to rest for 5 minutes.
    3. Meanwhile heat enough oil in a saucepan so that you can submerge the Meatless Farm Meat Free Sausages. The temperature needs to be 180C. Alternatively you can use a deep fat fryer.
    4. Roll the sausages in a little flour, make sure you shake off any excess. Dip the sausages in the batter and roll them around so they are coated thoroughly. Carefully place in the oil and cook for 8-10 minutes or until golden and crispy.
    5. Make the salad by mixing together the lemon, oil, sugar, salt and paprika. Leave to one side to let the sugar and salt dissolve. Place the tomatoes and red onion in a bowl and just before serving add the paprika dressing.
    6. For the fries, crush the salt with the back of a spoon in a small cup or bowl, then add the pepper. When your sausages are cooked, remove from the oil and allow to drain. Add the fries (or potatoes) to the hot oil to cook. When cooked, drain and serve sprinkled with your desired amount of the salt and pepper.
    7. Serve the fries with the bangers and tomato and onion salad
