Boxing Day Baklava

Boxing Day is all about kicking back and relaxing with friends and family. Enjoy this mince baklava as a centrepiece for everyone to tuck in to.

Ingredients

For the cranberries

  • 300g cranberries
  • 2 tbsp olive oil
  • Small handful fresh thyme removed from
  • stalk
  • 1 tbsp light brown sugar

 

For the root veg filling

  • 900g leftover cooked root veg roughly chopped
  • 2 tbsp harissa
  • 200g leftover vegetarian stuffing
  • 200g vegan style feta crumbled
  • 1 red chilli finely chopped
  • Seasoning

 

For the mince & cranberry filling

  • 3 tbsp olive oil (1 for veg base & 2 for mince)
  • 1 red onion finely chopped
  • 1 tbsp brown sugar
  • 4 garlic cloves finely chopped
  • 1 pack Meatless Farm Plant-Based Mince
  • 1 tbsp sumac
  • 1 tbsp cumin
  • 250 ml vegetarian beef stock
  • 1 tbsp tomato paste
  • Seasoning

 

For the pastry

  • 2 x 270g packs of filo pastry
  • 100g butter melted
  • 50g Maple Syrup
  • Pecans and pistachios finely chopped

Preparation

  1. Preheat your oven to 180C/ 200C fan/Gas mark 6. Lay your cranberries on a baking tray and toss with the oil, thyme and sugar and roast for 20 mins.
  2. Meanwhile, mix your leftover root veg in a bowl with harissa, stuffing, feta, chilli and season.
  3. In a clean pan, add another 2 tbsp of olive oil and increase to a medium-high heat. Gently flake your Meatless Farm mince into the pan and leave for 1 min. Continue to cook for a further 12 mins, moving about until the mince is nicely caramelized (add more oil if needed).

  5. Add the sumac, cumin, stock, tomato paste and cranberries. Taste, season and simmer for 5-10 mins.
  6. Trim all filo sheets to fit into your ovenproof dish and set to one side. Brush your dish all over with melted butter.
  7. Now to get building! Brush 4 filo sheets with butter and layer into the bottom of your dish. Top with 1/3 of the leftover root veg filling and then top with 1/3 of your Meatless Farm mince and cranberry filling. Top with another 4 buttered filo sheets and a 1/3 of each filling. for the final layer, top with another 4 buttered sheets, remaining fillings and top with your final 4 buttered filo sheets.
  8. Cut 1.5 inch strips into your baklava, in a diagonal pattern each way, creating diamond shaped pieces (going all the way through to the bottom layer). Bake for 25-30 mins.
  9. Once baked and golden, remove from the oven and drizzle with honey and pecans before placing centrestage on your Boxing day table.
