Cheesy Vegan Tacos

These tasty cheesy tacos are perfect for a Mexican-inspired feast. Packed with our delicious plant-based mince filling and all the Tex Mex extras you want.

Ingredients

  • 1 pack Meatless Farm Plant-Based Mince
  • 200g Violife Grated Original
  • 2 tbsp coconut oil
  • 1 onion, finely chopped
  • 1 tbsp tomato paste
  • 1 tsp chili flakes
  • 1 tbsp maple syrup
  • 8 hard tacos shells
  • ½ cup pickled onions
  • 1 ready to eat avocado, finely chopped
  • Juice from one lime
  • A few coriander leaves

Preparation

  1. In a large pan heat coconut oil. Add the chopped onion and the Meatless Farm Plant-Based Mince. Cook for 3-5 minutes until the Plant Based Minced starts to brown. Add tomato paste, chili flakes, maple syrup and 2 tbsp of water, and cook for another 3-5 minutes.
  2. To make the pickled onions, thinly slice a small onion and let it rest in a bowl with apple cider vinegar and a pinch of salt for at least 1 hour.
  3. To serve take a taco shell. First add the Plant-Based Mince. Then top with Violife Grated Original. Add some pickled onions, avocado, lime juice and a few coriander leaves. Enjoy!
