A creative twist on the classic chilli non carne, this version is a great source of fibre and Vitamin A thanks to the added sweet potato.
Ingredients
- 1 pack Meatless Farm Meat Free Mince
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- 2 tsp ground coriander
- 2 tsp ground cinnamon
- 1 tsp ground cumin
- 1 tsp chilli powder
- 2 tbsp tomato puree
- 1 can chopped tomatoes
- 1 veg stock cube
- 1 can kidney beans, drained
- 1 can chickpeas, drained
Method
- Cook the onion in the olive oil over medium heat for about 7 minutes.
- Add the Meatless Farm Meat Free Mince and cook for a further 5-7 minutes, making sure you keep stirring to break up the mince.
- Add the garlic and cook for another minute or so.
- Add the spices and cook for a couple of minutes stirring continuously.
- Add the tomato purée, mix through well and cook for a couple of minutes.
- Add the chopped tomatoes.
- Fill the can with water and add this too.
- Add the veg stock.
- Add the kidney beans and chickpeas.
- Mix well, bring to a simmer and cook for 15 minutes.
- Season and serve with sweet potato and a side salad
