Sausage rolls are the ultimate in party food. We’ve added tangy cranberry sauce and oozy cheese to ours this festive season.

  • 1 pack Meatless Farm Plant-Based Mince
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried sage
  • 200g leftover vegetarian stuffing
  • 150g cranberry sauce
  • Seasoning
  • 1 pack of puff pastry
  • 100g brie cut into strips
  • 2 egg yolks beaten
  • 1/2 tsp black pepper
  • 2 tbsp maple syrup
  • Pistachios finely chopped

  1. Preheat your oven to 160C/ 180C fan/Gas mark 5.
  2. Tip your Meatless Farm mince into a large bowl, add garlic powder, onion powder, mixed herbs, stuffing, cranberry sauce and seasoning and mix to combine.
  3. Roll out your pastry on a piece of baking paper and then add half of the mince filling in a sausage shape along the centre (working lengthways). Flatten the mince filling slightly with your hands and place your strips of brie down the centre. Add the rest of the mince filling on top and use your hands to enclose the mince filling around the brie in a long sausage shape.
  4. Brush the exposed pastry edge with egg wash and pull one of the long sides of the pastry over to meet the other (keeping the pastry tight around the filling). Press the edges together with a fork.
  5. Brush all over with egg and pop in the fridge for 10 mins to set. Remove from the fridge, eggwash again, and sprinkle all over with pepper. Lift your roll on it’s baking paper, pop on a baking tray, cut into 10cm pieces and bake for 20 mins until golden.
  6. Remove from the oven, allow to cool slightly and drizzle with maple and pistachios for an absolute Boxing day buffet winner.
