Meatless meatballs with rice and vegetables in a bowl

Hoisin Meatless Ball Rice Bowl

Ingredients

  • 1 pack Meatless Farm Meat Free Meatballs (available in Foodservice only, or you can make your own from Meatless Farm Meat Free Mince)
  • 1 small cucumber, sliced
  • 50g cabbage, shredded
  • Handful coriander
  • 120ml cup hoisin sauce
  • 50g carrots, thinly sliced
  • 50g red onion, thinly sliced
  • 50g mayonnaise
  • Juice of 1 lime
  • 1tbsp sriracha sauce
  • 225g jasmine rice & quinoa blend, cooked
  • 120ml vinegar
  • 120ml hot water
  • 2 tbsp salt
  • 4-6 tbsp sugar
  • Thumb-sized piece of ginger, grated
  • 1tsp cinnamon powder

Preparation

  1. Prepare the pickling liquid by combining the vinegar, hot water, salt and sugar.
  2. Submerge the carrots in half of the pickle liquid and let them “pickle” in fridge overnight. Do the same with the red onion in the remaining liquid.
  3. Preheat oven to 180C.
  4. Add rice, quinoa, cinnamon, ginger, and salt to cold water and bring to boil, cover and lower to simmer for 20 minutes.
  5. Coat the Meatless Farm Foodservice Meatballs – or create your own by using our Meatless Farm Mince – in hoisin sauce and place in the oven for 10 minutes.
  6. When cooked, grill the meatballs for remaining 45 seconds, just to crisp the exterior.
  7. Prepare the spicy mayo by blending mayonnaise, lime juice, sriracha and liquid aminos.
  8. We eat with our eyes first so to build the prettiest rice bowl style the ingredients, so each has room to shine! Combine cooked rice/quinoa blend, hoisin meatballs, pickled carrots, pickled onions, cucumber, cabbage in a serving bowl.
  9. Garnish with coriander and serve with spicy mayo.
