Marry Me Chicken

This dish is so good you’ll be getting down on one knee saying ‘Marry me, chicken!’. A quick, simple way to create a date night meal.

Ingredients

  • 2 Meatless Farm Plant-Based Chicken Breasts
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 3 sprigs fresh thyme
  • ½ tsp red chilli flakes
  • 2 tsp miso
  • 1 tbsp sun blushed tomatoes, finely chopped (or use tomato pesto)
  • 100ml soy cream
  • 400ml veg stock
  • 20g grated vegan parmesan (or cheese of your choice)
  • A handful of chopped parsley

Method

  1. Heat some oil in a non-stick pan over a low heat, add the onion and cook gently for 5-10 mins until soft. Add the Meatless Farm Plant-Based Chicken Breasts to the pan and colour on both sides.
  2. Add the thyme and garlic to the pan with the tomatoes and miso cook for a couple of mins.
  3. Then add the stock and the cream, and season well with plenty of pepper and the chilli flakes.
  4. Simmer for around 10 mins until the sauce has thickened. Stir in the herbs and the cheese and you’re good to go!
  5. Serve with mash or pasta and a big lovely bowl of salad.
