Meatless Farm mince with a Mexican twist

Meat-Free Mexican Chilli Bowl

Serves 4

Ingredients

  • 400g pack of Meatless Farm mince
  • 2 white onions, diced
  • 6 cloves of garlic, crushed
  • 1 red pepper de-seeded and diced
  • 2 x 400g tins of mixed beans, drained and rinsed
  • 1 large tbs tomato purée
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon powder (optional)
  • 1/2 tsp turmeric powder (optional)
  • 300ml water
  • Chilli to taste
  • Salt & pepper
  • Splash of olive oil

Method

  1. Add onions, pepper and garlic to a sauce pan with a touch of oil and gently sweat them off until nice and soft and smell sweet.
  2. In a separate pan fry off the meatless meat over a medium heat and break it up as you cook it with a wooden spoon or spatula. Once it starts to caramelise. I.e starts to golden brown and set aside ready for later.
  3. Add the tomoto purée to the onions, peppers and garlic and cook until it starts to stick to the bottom of the pan.
  4. Then add the spiced, beans, water and the already cooked meatless meat and simmer for 5 to 10 mins.
  5. Top with guacamole, soured cream or creme fraiche, then season to taste and enjoy!
