Ingredients
- 1 400g pack Meatless Farm mince
- 1 tbsp olive oil
- 125g white onion, sliced
- 150g tomatoes, roughly chopped
- 1 clove garlic, finely chopped
- 125g yellow bell pepper, sliced
- 125g green bell pepper, sliced
- ½ tsp oregano
- 1 tsp cumin
- 1 tspn garlic powder
- 1 tbsp mild chilli powder
- 1 tbsp smoked paprika
- Pinch sea salt
- 1 400g tin black beans, drained
- Coconut Lime Crema:
- 80ml coconut yogurt
- Juice of half a lime
- ¼ tsp lime zest
- To Serve:
- 10g coriander, roughly chopped
- 1 avocado, sliced
- Tortillas
- 120ml water
Method
- Heat oil in a large pan over medium heat.
- Cook onion, tomato, garlic, bell peppers, and spices until they begin to soften, about 5 minutes.
- Add Meatless Farm mince, stirring constantly, cooking for 4–6 minutes, or until browned.
- Add black beans and water. Cover and let simmer for 5 minutes.
- Make the coconut lime crema: In a small bowl, combine coconut yogurt, lime juice, and lime zest. Set aside.
- Top fajita mixture with coconut lime crema, chopped coriander, and avocado.
- Serve with tortillas, Enjoy!
