Meat-Free Fajitas

Ingredients

  • 1 400g pack Meatless Farm mince
  • 1 tbsp olive oil
  • 125g white onion, sliced
  • 150g tomatoes, roughly chopped
  • 1 clove garlic, finely chopped
  • 125g yellow bell pepper, sliced
  • 125g green bell pepper, sliced
  • ½ tsp oregano
  • 1 tsp cumin
  • 1 tspn garlic powder
  • 1 tbsp mild chilli powder
  • 1 tbsp smoked paprika
  • Pinch sea salt
  • 1 400g tin black beans, drained
  • Coconut Lime Crema:
  • 80ml coconut yogurt
  • Juice of half a lime
  • ¼ tsp lime zest
  • To Serve:
  • 10g coriander, roughly chopped
  • 1 avocado, sliced
  • Tortillas
  • 120ml water

Preparation

  1. Heat oil in a large pan over medium heat.
  2. Cook onion, tomato, garlic, bell peppers, and spices until they begin to soften, about 5 minutes.
  3. Add Meatless Farm mince, stirring constantly, cooking for 4–6 minutes, or until browned.
  4. Add black beans and water. Cover and let simmer for 5 minutes.
  5. Make the coconut lime crema: In a small bowl, combine coconut yogurt, lime juice, and lime zest. Set aside.
  6. Top fajita mixture with coconut lime crema, chopped coriander, and avocado.
  7. Serve with tortillas, Enjoy!
