Meatless Sleepy Joes

Don’t worry Joe. We got this. With our plant-based mince you can sleep easy knowing that 10 plant-based Sleepy Joes has the same carbon footprint of 1 beefy Joe.

Ingredients

  • 2 tbsp vegetable oil
  • 1/2 onion, diced
  • 1/2 green pepper, diced
  • 2 cloves garlic, crushed
  • 400g Meatless Farm Meat Free Mince
  • 200g plum tomatoes, pureed
  • 100g vegetable stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • 1 tbsp mustard
  • 1 tbsp light brown sugar
  • Salt & pepper
  • 4 burger buns

Preparation

  1. Heat the oil in a large pan over high heat. Add 2-3 tbsp of oil to a non-stick pan over a medium heat. When the oil is hot add the mince and brown the block on one side. After a few minutes flip the block and cook the second side then you can flake the mince apart using a wooden spoon. Cook for around 10 mins until the mince is cooked and starting to colour evenly. Remove from the pan until needed later.
  2. Next return the pan to the heat and add a little oil and then throw in the onion, green pepper and garlic and cook over a medium heat for 2-3 mins. Then add the tomatoes, veg stock, Worcestershire sauce, mustard and sugar. Cook for 10-15 mins and then add the mince and around 200ml of water. Simmer for 10 mins. Check the seasoning. You might need a little salt or soy sauce.
  3. To serve, brush the burger buns with melted butter or olive oil and toast in a dry pan until golden on both sides. Spoon in a generous dollop of the mince mixture and serve
