Meatless Farm ambassador Omari McQueen cooks up a hearty Meatless Cottage Pie. This is a great recipe to get the kids helping out with!
Ingredients
- 1 pack Meatless Farm Plant-Based Mince
- 8 small-medium potatoes
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp butter
- 120ml oat milk
- 3 carrots, diced
- 1 tin green peas
- 1 red onion, chopped
- 2 spring onions, chopped
- 2 garlic cloves, chopped
- 1 tin chopped tomatoes
- 300ml vegetable stock
- 1 tsp all-purpose seasoning
- 1 tsp paprika
- 1 tsp jerk marinade
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1/2 tsp allspice
Method
- Add your potatoes to a pan of salted boiling water for 30mins until soft.
- While the potatoes are cooking, add your red onion, spring onion and garlic to a pan with a dash of oil and sauté until soft.
- Add in the Meatless Farm Plant-Based Mince and leave to cook for 2 mins, before adding in the seasoning, paprika and jerk marinade. Cook for another minute and then throw in your basil, thyme and allspice. Give everything a good mix together.
- Next, add the diced carrots, green peas, chopped tomatoes and the vegetable stock. Give the pan a good stir and leave to simmer and reduce for around 10-15 mins.
- When your potatoes are soft, drain and then place them in a large bowl. Add the butter, black pepper, salt and oat milk. Mash until fluffy and smooth.
- Once that is done and the mince has cooked you can begin to build your cottage pie.
- Firstly, spoon the mince into the bottom of the casserole dish and spread evenly, followed by the mashed potato.
- Using a fork, gently make lines in the potato – the small peaks will crisp up nicely!
- Then place in the oven on medium to high heat for 15-20 mins until golden brown.
