‘A’ grades all round for this top of the class school dinner, created by Meatless Farm ambassador and top vegan chef Omari McQueen.
Ingredients
- 1 pack of Meatless Farm Plant-Based Chipolata Sausages
- Vegetable oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 5 spring onions, sliced
- 3 carrots, diced
- 1 butternut squash, diced
- 1 tbsp of tomato sauce
- 1 tsp of all-purpose seasoning
- 1 tsp of jerk marinade
- Sprinkle of thyme
- 1 vegetable stock cube
- 2OOml of boiling water
Method
- Heat up the vegetable oil in a pan. Add the onions, garlic and spring onions and saute.
- Add in the carrots and butternut squash and cook for a few more minutes until starting to soften.
- Add the tomato sauce, all-purpose seasoning, jerk marinade and thyme and mix everything together. Cook for another 2 mins.
- Add your vegetable stock of choice, dissolved in 200ml of boiling water.
- Leave butternut squash to cook down whilst you prepare your Meatless Farm sausages
- Season the Meatless Farm Meat Free Sausages with all-purpose seasoning, jerk marinade and thyme. Add to the stew and simmer for 10-15 mins.
- Serve and enjoy!
