Remove the sausages from the packaging (but leaving the plant-based casings on). Heat a few tablespoons of oil in a non-stick pan on a medium heat. Add the sausages and cook, turning occasionally for approximately 8-10 minutes.
Meanwhile, fry the onion and garlic on a medium heat in a separate pan until softened. Add the chopped tomatoes, herbs, pinch of salt and black pepper and simmer for 2 minutes.
Drain the mixed beans and add to the pan of sauce. Simmer and stir for a further 4-5 minutes.
Toast the slices of bread and spread with butter (if using). Pour over the beans and add your sausages.
