Quesadillas are something beautiful, but fill it with a Mexican-inspired plant-based burger and serve with all the trimmings and we’ll be in the mood for a fiesta!
Ingredients
- 3 tbsp olive oil (2 for burger glaze and 1 for wrap)
- 2 tsp chipotle paste
- Seasoning
- 1 pack Meatless Farm Quarter Pounders
- 100g vegan Cheddar grated
- 100g salsa
- 200g vegan refried beans
- 1 babygem lettuce finely sliced
- 2 large vegan soft tortilla wraps
For the guacamole
- 2 ripe avacados mashed
- Juice of 1 lime
- Small handful coriander roughly chopped
- 2 garlic cloves minced
- 1/2 tsp cayenne pepper
- 1 small red onion diced
- Seasoning
To serve (optional)
- Vegan tortilla chips
- Leftover salsa
- Leftover guacamole
Method
- Start by mixing together your chipotle paste with 2 tbsp olive oil and then smother your Meatless Farm burgers all over, season and set aside (keep any remaining mixture).
- Mix all guacamole ingredients together in a bowl with a pinch of salt and pepper and pop in the fridge until later.
- Heat a non-stick pan over a medium heat, add the remaining chipotle oil and cook your Meatless Farm burgers for 6-7 mins ensuring to flip occasionally for an even cook. Place your burgers to one side and wipe your pan clean.
- Now for the tortillas! Make a cut from the bottom, centre edge of each tortilla to the middle center.
- In the bottom left corner add a good dollop of guacamole and 1/4 of the vegan Cheddar. Then, moving clockwise, in the top left quarter spread half the salsa. In the top right quarter dd 1/4 of the vegan Cheddar followed by half the lettuce and a Meatless Farm Burger. In the bottom right quarter add half the refried beans.
- Time to get folding! Starting with the bottom left quarter, fold the tortilla up towards the top left quarter, then over to the right and finally down and over the burger (repeat steps 5-6 for your second burger).
- Add 1 tbsp of oil to your pan over a medium-high heat and then add your quesadilla burgers. Cook for a couple of mins each side until golden and your vegan cheese is melted and oozing. Enjoy with nachos, salsa and guacamole for a fiesta of flavours like no other!
