The perfect midweek winner for when you need something quick and delicious. Singapore noodles, made with crisp Meatless Farm plant-based mince. The only question is, how good are your chopstick skills?
Ingredients
- 3 tbsp light soy sauce
- 2 tbsp rice wine
- Juice of 1 lime
- 1/2 tsp sesame oil
- 2 1/2 tsp curry powder
- 1 tsp brown sugar
- 1 tsp ground black pepper
For the stir fry
- 200g rice vermicelli noodles
- 3 tbsp vegetable oil (2 for mince & 1 for veg)
- 1/2 pack Meatless Farm Plant-Based Mince
- 1 tbsp soy
- 2 tsp brown sugar
- 1 white onion finely sliced
- 3 garlic cloves finely sliced
- 1 inch fresh ginger grated
- 1 red pepper finely sliced
- 1 carrot peeled and finely sliced
- 1 green chilli finely sliced
- 3 spring onions finely sliced incl stalk
Method
- Start by boiling your kettle. Meanwhile, mix all sauce ingredients in a small bowl and set to one side.
- Place your vermicalli noodles in a large bowl and pour over boiling water. After a couple of mins drain and set to one side whilst you continue cooking the rest of the dish. Make sure to move your noodles about every now and then to stop them sticking (rinse with hot water if they do stick).
- Heat 2 tbsp vegetable oil in a wok or large, non-stick frying pan over a medium-high heat. Gently flake your Meatless Farm mince into the pan and leave for 1 min. Add soy and brown sugar and continue to cook for a further 12 mins, moving about until the mince is nicely caramelized (add more oil if needed).
- Remove the mince from the pan and set to one side. Add a tbsp of veg oil to the same wok/pan and add your white onion, garlic and ginger and fry for 3 mins until fragrent.
- Add your pepper, carrot and green chilli and fry for a further few mins. Add the noodles, spring onions and sauce and toss about before adding yor caramelized mince. Taste and add more seasoning if needed!
- Move all ingredients about in the pan until heated through and enjoy vibrant yet simple street food all from the comfort of your sofa!
