Spiced Sticky Red Cabbage

This spiced red cabbage is an epic Christmas side dish recipe. What’s more, it can be made in advance and frozen for the big day, making life easy for you!



  • 1 red cabbage, finely sliced or shredded on a mandolin
  • 2 red onions, sliced
  • Handful of frozen or fresh cranberries
  • 1 cinnamon stick
  • 1 star anise
  • 1 small piece of ginger, grated
  • 2 green apples, sliced
  • Zest of 1 orange
  • 150g Muscovado sugar
  • 200g red wine vinegar


  1. Drizzle a little oil in a big pan over a low/med heat, add the onions and cabbage, season with a pinch of salt, cook for around 15 mins, stirring every now and then.
  2. Then add all of the lovely spices, the cranberries, the vinegar and the sugar. Stir well and cook nice and gently for around 30 mins until it’s beautiful and sticky. Be careful not to burn the bottom of the pan though, that’d ruin Christmas.
  3. Add the apple, cook for around 5 mins and you’re good to go.
