Super Quick Chicken Jambalaya

Serves 4

Feed your family for a fiver with our Super Quick Chicken Jambalaya. Packed full of protein, veg and filling rice.

Ingredients

  • 2 Meatless Farm Plant-Based Chicken Breasts (£3)
  • 250g rice (57p)
  • 1 onion, diced (26p)
  • 2 cloves garlic, chopped (6p)
  • 20g cajun spice (27p)
  • 200g peas (22p)
  • 15g coriander (25p)
  • 700g water or veg stock

Preparation

  1. Place the Meatless Farm Plant-Based Chicken Breasts on a baking tray, drizzle with oil, season with salt and roast in the oven at 180C for 10 mins.
  2. While the chicken is cooking drizzle a little oil into a pan, add the onion, season with a little salt and gently sweat for 10 mins. Add the garlic and spices and cook for a further 2 mins.
  3. After 10 mins, remove the chicken from the oven and chop into pieces.
  4. Stir the rice into the pan of veg, mix well and then pour in half of the water/stock, stir and bring to a gentle simmer. Cook covered for around 10 mins and add more water as you go until the rice is cooked and fluffy.
  5. Add the chicken and peas to the rice and mix well.
  6. Have a taste and see if it needs any more salt or pepper, then stir in the chopped coriander. You’re ready to serve!
