What is Plant-Based Chicken? 

Over the years, we have seen plant-based meat alternatives take on the world by storm, but this is especially true of meatless chicken products. How Meatless Chicken is Made

Let’s start with the basics! Any plant-based meat, chicken or otherwise, is made with a combination of plant materials that are designed to mimic the taste, appearance and texture of specific meats. Here’s how we do it: 

Appearance: As a white meat, chicken is pale in color both before and after it is cooked. In order to maintain a similar look, we allow the natural coloring of each ingredient to shine through, only adjusting as needed to mimic the white color of cooked chicken.

Texture: The natural qualities of animal proteins give the meat a springy texture and self-binding characteristic, which is often difficult to replicate when using rigid plant protein sources. As a result, many plant-based meat alternatives tend to crumble and dry out when they are cooked. At Meatless Farm, we’ve solved this problem by incorporating several key ingredients in our Chik’n products. First, we use sunflower and coconut oil as a fat source to help bind the protein together and give that distinctly juicy texture. We then use pea protein concentrate and bamboo fiber to give our plant-based Chik’n a more firm and fibrous texture similar to animal meat. Finally, we use plant-based thickeners, potassium lactate and methyl cellulose, to hold it all together.

Taste: All of this effort would be wasted, however, if we weren’t able to deliver on the taste. That’s why we incorporate two key ingredients to achieve the savory and sumptuous umami flavor of animal meats: yeast extracts and natural flavorings. Combining these two ingredients together allows us to get all the juicy, delicious taste of meat without using any actual meat. Thanks, science! 

Most often, the result is what is known as “restructured meat,” which is just a fancy way of saying that the plant-based meat product has been formed into a particular shape, such as with nuggets, patties, links, or crumbles. Restructured meat is one of the most common types of plant-based alternatives, with the other being whole muscle meat – a product designed to mimic an entire steak or chicken breast.
