5 Easy Vegan Summer Recipes

The weather is heating up, and summer is upon us! So, if you’re like us, you’d rather be spending your time outside rather than in the kitchen. That’s why we’ve rounded up some of our favorite easy vegan summer recipes! There are many differences between vegan and vegetarian diets but since these recipes are made with vegans in mind, these dishes can be eaten by most different types of vegetarians. These dishes are loaded with all the nutrition you need to keep you satisfied throughout all of your adventures this summer while being completely free of meat and animal products or sacrificing flavor. Meat-Free Sausage, Spinach & Avocado

Packed with tons of protein (over nine grams!) and loads of healthy fats, this breakfast sandwich is the perfect pre-pool meal to keep you satisfied and happy. Plus, it’s easy to make, travels well, and can be doubled or even quadrupled to feed a larger crowd! Here’s how to make it!  

Start by removing your Meatless Farm Breakfast Patty from the package and seasoning with salt and pepper as desired. Then, add a dash of olive oil in a pan and cook your patty over medium-high heat until lightly browned, about four minutes per side. Meanwhile, add some vegan butter or oil to another pan and toss in a handful of baby spinach. Cover and cook over medium heat until the spinach is wilted. At the same time, lightly toast your English muffin. Finally, layer your sauteed spinach on your muffin, then top it with your Meatless Farm Sausage Patty and a few thin slices of fresh avocado. You can also add a slice of tomato or another vegetable to finish off this breakfast sandwich recipe. 

Breakfast Sausage Burritos

Talk about a filling, crowd-pleasing breakfast! This is the type of meal that will “stick to your bones” and keep you full of energy throughout the long summer days. Plus, its convenience as a burrito means you can grab-and-go if you make them ahead of time.

Then break up your tofu scramble before pouring it into a pan with oil or plant butter. Move the tofu around so everything cooks evenly. When you’re done, warm up your tortilla and load it up. Lunch

Crispy Chik’n Caesar Salad

Hosting a vegetarian BBQ this summer? This 15-minute recipe is the perfect addition to an outdoor gathering. Start off by making your own caesar dressing – it’s easier than it sounds! Simply drop some garlic, lemon juice, vegan mayo, capers, nutritional yeast, and black pepper into a blender and blend until everything is well combined. Next, cook your Meatless Farm Chik’n Cutlet according to the package instructions. In the meantime, tear up some ciabatta bread and drizzle it with olive oil before throwing it in a pan to toast. The Ultimate Meatless Whoppa

Nothing is more quintessentially summer than a burger on the grill! And thankfully, there is an easy way to make this summertime dish vegan-friendly. 

Simply brush your Meatless Farm burger patty with tamari or soy sauce for extra flavor, and then put it on the grill! Just be sure to place the patty on an area of the grill away from other meats if they are cooking too. Once cooked through, place your patty on a toasted burger bun with sliced pickles, ketchup, sliced onion, tomato, lettuce, and your vegan mayo of choice. Serve with a side of grilled vegetables and enjoy!

DJ BBQ’s Rainbow Slaw Hot Dogs

If you’re more for a hot dog than a burger, you’ll want to give this flavorful recipe a try! 

Start by throwing your Meatless Farm hot dogs on the grill. They’ll need to cook for about 8 to 10 minutes in total but should be rotated about 90 degrees every two to three minutes to ensure they cook evenly. While the hot dogs cook, mix shredded cabbage (half red, half green), carrots, and red onion in a bowl. In a smaller bowl, stir together some vegan mayo, apple cider vinegar, and a squeeze of mustard until well combined. Then pour the creamy sauce over your veggie mixture and combine. Finally, place your hot dog in a bun and top with a generous helping of the slaw!
