Chilli Non Carne with Sweet Potato

A creative twist on the classic chilli non carne, this version is a great source of fibre and Vitamin A thanks to the added sweet potato.

Ingredients

  • 1 pack Meatless Farm Meat Free Ground
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 2 tsp ground cilantro
  • 2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 2 tbsp tomato puree
  • 1 can chopped tomatoes
  • 1 veg stock cube
  • 1 can kidney beans, drained
  • 1 can chickpeas, drained

Preparation

  1. Cook the onion in the olive oil over medium heat for about 7 minutes.
  2. Add the Meatless Farm Plant-Based Ground and cook for a further 5-7 minutes, making sure you keep stirring to break up the ground.
  3. Add the garlic and cook for another minute or so.
  4. Add the spices and cook for a couple of minutes stirring continuously.
  5. Add the tomato purée, mix through well and cook for a couple of minutes.
  6. Add the chopped tomatoes.
  7. Fill the can with water and add this too.
  8. Add the veg stock.
  9. Add the kidney beans and chickpeas.
  10. Mix well, bring to a simmer and cook for 15 minutes.
  11. Season and serve with sweet potato and a side salad
