Sauté your vegetables: Place a stock pot on medium heat, stir in the olive oil, Bok choy, white onions, cilantro, lemongrass, green onions, and carrots cook for 8 minutes.
Bump up the flavor: Next add turmeric, Sage, Cardamom, Salt and sumac stir and cook 2 more minutes. Next stir in the chickpeas, coconut milk, curry paste and water and bring a slow boil before adding the Meatless Farm Meatballs.
Simmer: Reduce the heat to low and let simmer
