Stuffed cabbage rolls can have any number of fillings, but this spiced Meatless Farm ground mixture takes them to the next level!

  • 1 pack of Meatless Farm Plant-Based Ground
  • 1 shallot, finely chopped
  • 2 cloves of garlic, finely chopped
  • 10g flat leaf parsley, finely chopped
  • ½ tsp chilli flakes
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 4 big green cabbage leaves
  • Kitchen twine
  • 1 tbsp olive oil
  • 1 lb potatoes, peeled and cubed
  • 2 tbsp vegan cooking cream
  • Sea salt and freshly ground pepper to taste

  1. Mix the Meatless Ground with the shallot, garlic, parsley, chilli flakes, fennel, and cumin. Season to taste with salt and pepper.
  2. Blanche the cabbage leaves for 30 seconds each. Pat dry with kitchen towel, if needed cut out the thick vein in the centre.
  3. Preheat the oven to 345°F.
  4. Divide the ground in four and form patties with wet hands. Place the patties onto the cabbage leaves and fold the sides over. Roll into closed packages. Secure with the kitchen twine.
  5. Brush the packages with olive oil and place into a baking tray. Bake the packages for 25 minutes in the oven.
  6. In the meanwhile, cook the potatoes for 20 minutes.
  7. Drain the potatoes, let them steam for a bit and add the vegan cooking cream and salt and pepper to taste. Mash into a puree.
  8. Serve the cabbage packages with the potato puree. Garnish with some extra chili flakes.
