Stuffed peppers with meat free mince

  • 1 pack Meatless Farm Meat Free Ground
  • 4 peppers, halved, de-seeded and blanched in boiling water
  • 1 cup sweetcorn
  • 1 cup cooked black beans
  • 1 cup diced tomatoes
  • 1/2 cup vegetable broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp tomato paste
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 2 tbsp olive oil
  • Chopped cilantro and fresh salsa for serving


  1. Heat skillet with olive oil and add onion, cumin and chilli powder. Stir until onions are tender.
  2. Add the Meatless Farm Meat Free Ground and cook, stirring occasionally until browned.
  3. Add diced tomatoes, garlic, tomato puree and vegetable stock. Stir and simmer for approximately 5 mins.
  4. Combine black beans and sweetcorn (you may also add chopped cilantro if desired) to the Meatless mixture and remove from heat.
  5. Fill prepped pepper halves with the mixture, place in a covered pan and bake in a preheated oven at 350FC for approximately 20 mins until warmed through.
  6. Serve with chopped coriander and fresh salsa if desired.
